Madeira

This is a fortified wine which means the fermentation process was stopped by adding alcohol to it. There are some of these wines out there over 100 years old! This wine ranges from a dry wine to a sweet wine depenidng on the grapes used to make it.

Madeira,a fortified Portuguese wine has come from the Madeira Islands.This wine has a variety ranging from aperitif suited dry style to the dessert suited sweet ones.Also the cheaper class of this wine is mainly used for cooking.
From the Age of Exploration ,Madeira has been a port for ships heading towards East Indies,thus it encompasses a vast history in course of winemaking.It was initially shiped to Europe in 1515, to the court of King Francis I.During this voyage it was discovered that this particular wine had a positive effect on its aging process when it is shipped across the equator. This gave madeira the name vinho da roda, or "wine of the round voyage”. Neutral grape spirits were added to prevent the spoiling of the wine. During the long voyages, the wines is exposed to excessive heat and movement which transforms its flavor .
At present, the unique winemaking process involving heating the wine up to temperatures as high as 60°C (140°F) for an extended period of time and deliberately exposing the wine to some levels of oxidation. Due to this unique process, Madeira is a very robust wine that can be quite long lived even after being opened.
History

Madeira encompasses with itself a numerous series of historic event,like the major uprootal of this vine to place the sugarcane plantation in the end of 19th century.Also the like of the seizure of Hancock after it unloaded a payload of 3150 gallons of this wine with major disputes over import duties.Thus caused a riots eruption among the people of Boston.
Madeira , a favorite of Thomas Jefferson which he rose to toast The Declaration Of Independence.Also the like of, Alexander Hamilton and Benjamin Franklin, George Washington and many other American colonels immensely enjoyed this sinful wine.A remarkably history in its pocket isn't it??
Taste Profile

Madeira wine production is uniquely known for the estufagem aging process that basically aims to replicate the aging environment that would age this wine near the equator on a long sea voyage.This process hastens the mellowing of the wine taste and also preserves the secondary fermentation conditions.The wine under this process is deliberately exposed to air and heat so as to oxidize it.The resultatnt color thus obtained is mellow and tawny .Also caramel like colorings are also added to give it some amount of consistency.Thus many wine maker describe this kind of taste as "Maderised".
Madeira is made with four varieties of grapes. A bottle of madeira is labeled according to which grape type used in it.

They are:
• Verdelho - golden to sunset yellow and mellower on dry side.
• Malmsey - sweet and nut brown ion texture
• Bual - velvety sweet,dark chocolaty brown
• Sercial - lighter shade and very dry
• The other varieties on this island are not legally permitted for the production of this wine.
The "Rainwater" style of this wine which is prepared from verdelho grape is highly diluted version of madeira

Madeira is the best companion of cheese , a great pre-dinner sipper and a heavier version of it works well a post-dinner sipper by the fire.But it should be served relatively cool in a port-style glass with small stem .
